Beef is raised and sold by Carita's brother Rod Martin located in Annville, PA and he can be contacted directly to arrange the purchase, order, and selection of the products that you want made at the butcher. Pickup at the Zook Farm may be an option.

Each beef is sold by the hanging weight, either ¼, ½, or whole at $3.50 per Lb.
Hanging weight is as follows:
· ¼ 150lbs=$600.00
· ½ 300lbs=$1,200.00
· Whole 600lbs $2,400.00
These are average weights and will vary slightly on each beef.
The actual final weight after processing is generally 60% of hanging weight as follows
· ¼ 90lbs
· ½ 180lbs
· Whole 360lbs

Beef can be picked up at the butcher or at the Zook farm.
If you are interested in a whole beef I will deliver within reason to the butcher of your choice if they have an opening when the beef is due.
After the butchering, the beef is dry aged for anywhere between 2 and 3 weeks.
During that time you will contact the butcher to discuss the cuts, and any other specialty processing you may want from your part of the beef.
If you get a quarter of a beef you will have half of the front and half of the rear so you get a good mix of the cuts and roasts.
You will be responsible to pay for your part of the processing of your beef, prices can be seen on the website.
Once beef is processed they will call you and you can pickup and pay for your portion of the beef.
Our beef is 100% grass fed, no grain is ever given to our cattle, a cattle’s stomach is not designed for corn consumption. Because the beef is grass fed, it takes 27-29 months to grow our cattle to the best processing stage, compared to a feedlot cattle that is grain fed and processed at around 14 months.
We rotationally graze in grass growing season to help keep cattle healthy.
Belted Galloway Beef has been shown in a research study conducted at the University of Guelph - to have a total fat content of about 2% an extremely low percentage. The same study showed that the Belted Galloway Beef tested only contained about 1% saturated fat. In addition it showed that Belted Galloway beef had the same fat content as chicken and fish so fits in well with a healthy diet. Belted Galloway beef is exceptionally tender, full of flavor and juicy and were the winners of the 2003 Sydney Royal Show "Beef Taste Test".
